Deep Dish Pumpkin Pie

Ingredients -
1 (15 ounces) can Pumpkin
1 (12 ounces) can Evaporated Skim Milk
2 Eggs
2 Egg Whites
3/4 cup Sugar
1 teaspoon Ground Cinnamon
1/4 teaspoon Ground Allspice
1/4 teaspoon Ground Ginger
1/8 teaspoon Coarse Salt
1/2 cup Reduced-Fat Graham Cracker Crumbs
Light Whipped Topping and Additional Cinnamon, optional
Preparation:

1. Preheat the oven to 450 degrees.

2. In a medium bowl, combine the pumpkin, sugar, cinnamon, nutmeg and ginger.

3. Add the butter, milk and egg yolks.

4. Beat the egg whites until stiff.

5. Fold them into the pumpkin mixture.

6. Pour the mixture into the unbaked pie crust.

7. Bake the pie for 10 minutes then reduce the heat to 350 and bake for another 35 minutes, making sure that when you take it out a toothpick inserted in the middle comes out clean.
